We have a new Head Chef in the kitchen. Meet Krishneel, a talented chef with several years of experience in local and international kitchens, plus winner of the 2012 ‘Chef of the Capital’ award in Wellington, New Zealand. We sat down with Krishneel to have a quick chat about out his favourite comfort foods, the restaurant scene and who does the cooking at home.
What is your favourite comfort food?
There’s nothing better than slow cooked foods in winter. Whether it be a braised lamb shanks or a beef bone broth, I love sitting down to a warm hearty meal to warm you up from the inside out. I also love adding beer to the cook to give it that extra flavour
Share with us your favourite winter recipe?
Chocolate and Chilli Braised Beef Short Ribs | Trim the excess fat off the ribs then mix paprika, salt, chilli flakes & flour together and rub it on the ribs. Shake the excess flour off then cook the beef ribs on a baking tray for 10minutes. Next, add some spices to a saucepan and fry it until you can smell the spices, add some oil & butter together. Sauté some chopped vegetables on medium heat until they start to colour, add 200g of dark Chocolate & add Beef Stock. Bring it to a boil and add the Short Ribs. Reduce the heat, cover it with foil and braise it for 45min. Serve it with some crispy banana chips.

Which Sydney restaurant inspires you?
I love going to The Grounds of Alexandra for inspiration. It’s great for brunch on the weekends (although you might have to wait in line), but their lunches are my favourite. I love to order their slow-roasted lamb shoulder sandwich and spend the afternoon lazing in the sun in the courtyard with a beer after.
How about if you could travel anywhere in the world – where and what would you eat?
I would go to Asia and eat all the street food
